Cake for the Teacher!

This month I started attending some classes for Woman Entrepreneurs here in Puerto Rico.  These classes are awesome. I take them every Thursdays in Rio Piedras and I love them. Last Thursday I brung a cake in the form of a roasted chicken because the teacher has a Martins BBQ store at Aguadillas and I wanted to surprise her with it. And It was a totally HIT! So I wanted to share it with you:

Salty Sweet Popcorn Cookies






Ummmmmm Sweet & Salty! I'm a big fan of everything Sweet and Salty, well almost everything. These cookies were a big hit at a girl friend's get together. They disappeared instantly once they took a bite out of these babies. Very easy and quick to make .  Only one problem, they don't last long :(

1/2 c Butter softened
1/2 c sugar granulated
1/4 c brown sugar
1 egg
1 tsp vanilla extract
1 1/4 c All Purpose Flour
1/2 tsp baking soda
1/4 tsp kosher salt
2 cups popped popcorn coarsely chopped (I used buttered)

Heat Oven to 350 F. Beat Butter and sugars well. Add in egg and vanilla. Beat until fluffy. Slowly add in flour, baking soda and salt. Fold in popcorn and spoon teaspoon of dough onto prepared bake sheet with parchment paper, 1 inch apart. Bake 14 to 16 mins or until golden at edges.



If your kids like popcorn, these will be a Hit and they will LOVE these. Enjoy.

Ummmmm Salado, Dulce, Salado, Dulce, pero cuando lo unimos es como una explosión en nuestra boca, divino. Aqui estas galletas que fueron una sensación en la fiesta de amigas, donde se desaparecieron como arte de magia. Y si tus chicos les gusta las palomitas de maiz( popcorn) estas les encantaran!!!!
Ahora a la receta:

1/2 taza de mantequilla
1/2 taza de azucar granulada
1/4 taza de azucar morena
1 huevo
1 cdta de vainilla
1 1/4 taza de Harina todo uso
1/2 cdta baking soda
1/4 cdta sal
2 tazas de popcorn ya hecho, yo use el que viene con mantequilla.

Caliente el horno a 350F. Bata mantequilla con azúcares. Añada el huevo y vainilla y cremar bien.
Suavemente anada la harina, baking soda y sal. Añadir en forma envolvente el popcorn y echar por cucharadas en bandeja previamente preparada con papel de hornear. Hornee 14 a 16 mins o hasta dorar levemente.

Les aseguro que no durarán mucho tiempo en sus mesas! Que las disfruten!!!

Sweet & Salty Mini Corn Dogs





My kids just love these..... I discovered this recipe a few months ago when someone posted it facebook but I don't remember who. As soon as I read it, I copied it and made it the next day. And oh my God my kids loved it!!
This recipe makes a great entry at any party specially for kids and teens. I'm not a big fan of hotdogs but all kids seem to be!!!

These are also very fun to make with the kids, they'll love it!

Ingredients

1C All purpose flour
1 c Cornmeal
1/4 c Sugar
1T baking powder
1/2 tsp salt
1 egg
1 c milk ( I used 1/2 c evaporated milk and 1/2 c water)
1 pack of Hotdogs (cut in half for mini)
wooded sticks

Mix all ingredients together with mixer except for the hotdogs. Once all mixed together pour into a tall glass enough to introduce the entire hotdog. Pass the wooden stick thru the 1/2 hotdog


and insert into the mixture and deep fry it. Dry on a paper towel and serve.




I assure you they will not last long..

Mini dulce & Saladitos Corn Dogs

Wow... estoy mini corn dogs les fascina a los ninos y jovenes. Mis hijas se vuelven locas cuando los hago y no duran mucho. Esta receta la encontre en Facebook pero no recuerdo quien la posteo pero es realmente buena y rapidita de hacer, te toma como unos 10 minutitos en hacer todo el proceso y los ninos les encantan. Asi que no esperes mas y has la ya!!!!

Ingredientes:

1 t Harina Todo Uso
1 t Harina de Maiz
1/4 t azucar 
1 Cda de Baking Powder
1/2 cdta de sal
1 huevo
1t de leche ( utilize 1/2t leche evaporada y 1/2 t agua)
1 Paqt de Hot Dogs picados en la mitad
Palillos de Pinchos

Mezclar todos los ingredientes con batidora menos los hotdogs. Una vez unidos los ingredientes hechar en un vaso alto donde puedas introducir el hotdog ya previamente colocado en el palillo de pincho. Cuando coloques todas las mitades de hotdogs en los palillos los introduces en el vaso con la mezcla y los fries en una ollita onda (ver foto arriba). Escurrir el papel toalla y servir. Puedes servir con una salsita de MayoKetchup etc.

Gourmet Cookies





Ohhhhh, Gosh These sure are awesome cookies. I call them Gourmet cookies, because they are different and not your all time cookie. The first time I tasted these was in a Christmas season almost 14 years ago. They came in a glass bowl as a make them yourself mixture, just adding butter, eggs and vanilla. So I made them and they were sooooo delish I needed to get the recipe. So I put my taste buds and my brain to work until I figured it out. And here they are:

1 stick of Butter
1/4 cup granulated sugar
1/4 cup brown sugar
1 egg
1/2 tsp vanilla extract
1 cup all purpose flour
1/2 tsp Baking powder
1 cup regular plain cornflakes
1/2 cup shredded coconut
1 cup old fashion rolled oats
1 cup of white chocolate chips ( can also be regular chocolate chips)

Cream butter and sugars, add in egg and vanilla. Beat until combined only. Add flour and b. powder. Now add the rest of the ingredients and combine.



 Drop by spoon onto parchment paper on a baking sheet. Bake for aprox. 15 to 20 mins or until golden.


My twin daughters never tasted these because I never made them after they were born and when they tasted them today, they were so amazed that they were all gone in minutes. Yup all 24 of them, Gone. Lucky I got one out fast.  Enjoy and please give me feed back on theses.

Galletas Gourmet
Ohhhh estas galletas son riquisimas...... Yo les llamo galletas gourmet. Estas las hice hace como 14 anos atrás cuando compre en unas navidades un envase que contenía los ingredientes y las haces tu misma solo añadiendo mantequilla, huevos y vainilla. Y me gustaron tanto que tenía que conseguir la receta, estudie  la etiqueta y los nombres cientificos que tenia la etiqueta como ingredientes y puse mi paladar y cabezita a trabajar. Y huala!! La receta! 

1 taza de harina presto
1/4 t azucar granulada
1/4 t azucar morena
1 t cornflakes plain triturado
1/2 t de coco rayado
1 t avena (old fashion)
1 t chocolate chips blancos
1 barra mantequilla
1 huevo
1/4 tsp vainilla

Hornea a 350 por 8-10 mins

Cremar mantequilla con azúcares luego añades vainilla y huevo. Añades la harina poco a poco y luego todos los ingredientes restantes y mezclar solo hasta unidos. Poner por cucharadas en bandeja previamente forrada con papel de hornear. Hornear por 8-10 mins o hasta doraditas. Dejar enfriar por 5 mins y a disfrutar!!!!

Cream Puff Pastry Squares


These squares are my fave dessert, something soooo simple and so easy to make but so delish, yummmmy!
The first time I tasted these delight was in a little pastry store here in Puerto Rico called Sweet and Cakes. And of all the sweets they have nothing would call to me more than these. I was addicted ! So I took it as a goal to get the recipe some how. So here is my version of it....

Ingredients

Puff Pastry Sheet
8 oz of Cream Cheese
1/2  to 1 Cup powdered sugar
1/2 stick of butter
1 tsp Vanilla
Strawberries, raspberries, Kiwi or what ever fruit you like
Whipped Cream or Cool Whip

Prepare baking sheet with parchment paper and preheat oven to 350F. Cut Pastry Sheet into 2"x2"or 3"x 3" square (the size you prefer),  Bake for 15min or until golden edges. Cream the Cheese and butter, add the powder sugar slowly and vanilla. Cream until fluffy. Place in the fridge while the pastry is baking.

 Once done and cooled, cut a square in the center and remove. Fill the center with Cream Cheese mixture, Top with Cool Whip and desired fruits.



Add a small amount of powder sugar on top for garnish. Tadaaaa! Super easy and light. Great for any dessert party. Enjoy and Happy Baking!!!!

Spanish Version

Hojaldre Relleno de Crema y Frutas

Este postrecito es mi favorito, tan facil y sencillo pero tan rico y liviano. Yummmm!  La primera vez que probé este postre fue hace muchos tiempo en una pequeña tiendita llamada Sweet and Cake. De todos los postres tan ricos que hay solo tenía ojos para este. Así que me tome la tarea de conseguir la receta y aqui mi version:

Ingredientes

Pasta de Hojaldre
Un queso Crema
1/2 a  1 taza de azucar en polvo (depende de cuan dulce lo prefiere)
1/2 barra de Mantequilla
1 cucharadita de vainilla
Frutas a su gusto ( fresas, kiwi, moras.etc)
Crema batida o Cool Whip

Prepare la bandeja colocandole una hoja de papel encerrado. Precaliente el horno a 350F. Corte el hojaldre en cuadros de tamaño deseado ( 2"x2"o 3"x3") y hornear hasta doraditos. Retire del horno y enfriar. Mientras tanto creme el queso y mantequilla, poco a poco añada azucar y la vainilla. Batir hasta bien mezclado. Una vez fríos los cuadrados de hojaldre le cortan el centro y lo retiran (ver fotos arriba).  Los
rellena con la mezcla,  le añades la crema batida y decoras con las frutas deseadas. Tadaaaa listas.

Puff Pastry Elefante Ears



Elephant Ears, Palmiers, Butterflies, ohhhh so many names but which ever name you want to call them, they are still wonderful and addictive. Yes, addictive after eating one, you can't stop. The best of all they are super easy to make and only take about 20 mins to make.

Ingredients:

Puff Pastry Sheet
1/2 cup sugar
2 teaspoons Cinnamon
Honey Glaze

Mix in a cup the sugar and the cinnamon. Lay flat your Puff Pastry and pour the sugar and cinnamon mixture onto the  pastry and spread to cover it completely. Now roll the sides to the middle.
             
                   
After the rolling, wrap into a roll with the parchment paper and put in the freezer  for 15 mins approximately.



 Bake at 350 about 15 mins or until golden edges. Once cooled brush with Honey Glaze or just leave them just as is. Enjoy with coffee, tea or just alone. Yummmm Love these!! Happy Baking

Orejitas de Elefante, Espejuelitos, Mariposas, tantos nombres pero no importa cual elijas llamarlos, son únicamente Ricooooos y adictivos. Si tan adictivos que no podrás dejar de comerlos. Y tan facil de hacer que solo tomara como 20 mins hacer todo el proceso. Ahora la receta...

Ingredientes

Pasta de Hojaldre
1/2 taza de azucar granulada
2 cucharaditas de canela
Honey Glaze o Sirup de pancakes

Colocas la pasta en la mesa y le polvoreas la azucar junto con la canela, hasta cubrirla completa. Enrollar los lados hasta el centro y luego la envuelves en papel encerado y colocar en el congelador para que se afirme. (Ver fotos arriba) Una vez fría, la picas en pedazos de 1/2 pulgada de ancho y los colocas en una bandeja para hornear.  Hornear a 350F por 15 mins o hasta que se doren los bordes. Una vez frescos, con una brocha puedes pasarle Honey Glaze encima o simplemente dejarlos como estan.

Just Cookies!


Hi everyone! Just wanted to share these cookies that my friend Maritere asked me to make for her grand daughter in Australia. I just love the way they came out!!!


So today they went out on an airplane straight to Australia to be gobble up by a so cute little girl. And I wish I could see her little face when she receive them.

Biscoff Butter and Cream Cheese Pretzel Pops and Bites


These Pretzels cream cheese bites are awesome and soooo easy to make.   These would suite fine for kids birthday parties, friends get together or for any occasion.  And the best part is the ingredients used; you have them in your fridge.  Now for the recipe…..

½ Cup Biscoff butter, crush Biscoff cookies or Nutella can also be used
4 to 8 oz  Cream cheese softened
Mini pretzels 50 aprox.
Candy melts (any color you like)
Lollipop sticks
Sprinkles (optional)
Piping bag (optional) or palette knife

Cream the biscoff butter with the cream cheese and put in the piping bag or just use a small palette knife to put some on one of the pretzels and top with another pretzel. Then refrigerate for a few minutes until it chills about 10 mins. Meanwhile melt your candy melts or your chocolate. Once cooled, take your sticks and dip the tip in the chocolate and pop into the bites. When all bites have their stick, return them to the fridge for a few mins for them to stick really well.  Then remove and dip the pops into the chocolate and cover and slowly tap on the edge of the bowl so the excess chocolate would drip off. And now put them on parchment or wax paper to dry.  At this point you may add any sprinkles you like. And serve…
This batch makes about 25 to 30 pops or bites (just leave without the stick.





Bocaditos de Queso crema de Biscoff y Pretzels cubiertos de Chocolate
   
Estos bocaditos son maravillosos y tan fácil de hacer. Tus hijos, familia  & invitados no podrán dejar de comerlos.  Los Ingredientes? Ingredientes que tienes ya en tu nevera. Mantequilla de Biscoff, ummmm Rica! La puedes conseguir en cualquier supermercado y sino la encuentras, solo usa las galletas de biscoff (molidas).  

Ahora con la receta....


1/2 taza de Mantequilla de Biscoff, Galletas molidas o también puedes sustituir por nutella
4 a 8 onza de Queso Crema
Mini Pretzels ( aprox. 48- 50)
Candy melts o chocolate
Sprinkles (opcional)
Manga Pastelera  o pequeña espátula
Palitos de paletas (si desea hacerlas paletitas)

Procedimiento:
Cremar juntos queso y la mantequilla de biscoff. Esta la puedes colocar en una manga pastelera o solo utilizar la espátula pequeña para untar la mezcla a uno de los pretzels y colocar el otro en forma de sandwich. Una vez los termine, los coloca en la nevera aproximadamente 10-15 mins para enfriar. Mientras tanto derrita los candy melts o cobertura de chocolate. Si los desea como bocaditos, solo los cubre de chocolate y le hecha los sprinkles. Si desea hacerlos en forma de paletas, moja un poco el palito con el chocolate y los inserta dentro del bocadito. Deje que se endurezca y los cubre completos con el chocolate, los deja secar encima de papel encerado. Tada!!!!! Listos para servir. Salen aproximadamente de 25- 30 bocaditos.
